Tuscany’s Argentario Golf & Wellness Resort, now part of the Autograph Collection by Marriott International, has unveiled a new look of its fine dining Dama Dama Restaurant.
Executive Chef Emiliano Lombardelli presents a creative take on regional cuisine, highlighting seasonal ingredients and organic produce from the Resort’s own garden, along with top-quality local products from the Maremma area.
Some of the signature dishes from Emiliano’s kitchen include wafer-thin pink shrimps, olive oil ice cream and herring caviar, button-shaped pasta with caldero fish soup and lemon & liquorice meringue.
To complement this refined culinary experience, Milan-based interior designer Andrea Fogli has reimagined the Restaurant’s ambiance. The result is a blend of contemporary design, an intimate atmosphere and natural inspiration drawn from the Tuscan Maremma landscape.

Gone are the rustic light woods, replaced by a more sophisticated vibe using anthracite grey walls and floors, textured sculptures, abstract contemporary paintings, a cosy fireplace and a striking bronze deer sculpture that pays tribute to the Restaurant’s name. Dama Dama is the scientific name for the graceful fallow deer that can still be found roaming the property’s surrounding forests.
Every detail has been designed to create a warm, exclusive sensory experience. A new lounge area welcomes guests at the entrance while fresh flowers, raw wood tables, aged leather chairs and dramatic chandeliers set the tone inside.
The interior concept revolves around three key elements: “materiality,” expressed through raw and petrified woods; “fire,” evoked by the central fireplace; and a “honey” effect, seen in the brass accents and stylish stools that appear throughout the Resort.
A new winery room coming soon will complete the experience, perfect for private tastings and intimate dinners surrounded by a curated selection of fine wines.
